Ingredients:
4 bone-in, skin-on chicken thighs (or breasts, if preferred)
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp dried thyme (or Italian seasoning)
½ tsp onion powder
Salt and pepper, to taste
Fresh parsley (optional, for garnish)
Lemon wedges (optional, for serving)
Instructions:
Preheat the oven to 400°F (200°C).
Prepare the chicken:
Pat the chicken dry with paper towels to help the skin get crispy. Place in a large bowl or baking dish.
Season the chicken:
Drizzle olive oil over the chicken and rub to coat. In a small bowl, mix garlic powder, paprika, thyme, onion powder, salt, and pepper. Sprinkle evenly over all sides of the chicken.
Bake:
Place chicken skin-side up in a baking dish. Bake uncovered for 35–45 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden and crispy.
Rest & serve:
Let the chicken rest for 5 minutes before serving. Garnish with chopped parsley and a squeeze of lemon juice, if desired.
